Walnut - Marzipan Stars

A recipe from the Langthaler family, Bauer & Wirt Langthaler - Emmersdorf.

Ingredients:

  • 20 dag butter
  • 12 dag icing sugar
  • 30 dag flour
  • 6 dag grated
  • walnuts
  • 1 yolk
  • Vanilla sugar
  • Amaretto
  • Lemon zest
  • 20 dag marzipan
  • Marmalade
  • Chocolate light & dark
  • (best with Callebaut
  • chocolate)

Method:

  • Quickly knead together icing sugar (sieved), flour (sieved), grated walnuts, cold grated butter, egg yolks, vanilla sugar, amaretto and lemon zest into a dough.
  • Wrap the dough in aluminium foil and leave to rest for 1 hour in the refrigerator. Then roll out thinly and cut out small stars.
  • Place these on a tin covered with baking paper and bake at 170°C for 12 minutes.
  • Roll out the marzipan thinly (use icing sugar instead of flour) and cut out biscuits.
  • In the meantime, melt the milk and dark chocolate over steam.
  • Dab some home-made jam onto the baked star biscuits (works best with a piping bag) and stick together.
  • Cover the star biscuits with jam and top with a marzipan star.
  • Place the finished stars on a flat surface and use a piping bag to drizzle liquid chocolate in thin lines over the biscuits.

Top tip
Use walnuts from your own garden if you have them. Even if your loved ones do not like marzipan, encourage them to try these biscuits: they are sure to love them...
